New food business

If you are starting up a new food business you will need a Certificate of Hygiene prior to opening.

Before you make an application

Before you apply for a Certificate of Hygiene, you need to make sure you have met consent, building consent and trade waste disposal requirements. Depending on your requirements, you may need us to inspect the premises before you make an application. We recommend that you get in touch with us and make an appointment.

Check if the premises are consented

You will need to contact our resource consents team to ensure the business you are proposing is permitted in the location. There may be special requirements e.g. set operating hours and number of car parks, etc.

Check if your planned structural or plumbing changes require inspection

If you are planning to make structural changes or intending to change how the building is used, e.g. from a gift shop to a food business, you will need the building to be inspected. Contact our building team to help you with this.

Get your trade waste sorted before you apply

Our trade waste team can help you make sure that your new premises have a grease trap. The premises may also have specific trade waste requirements.

Think about a liquor licence

If you are planning to sell and supply  liquor at your new food premises, you will need to apply for a licence. Check to see how you apply for a liquor licence.

Food safety training

The manager of the new food business or the person responsible for training staff must have completed a basic food safety course. 

Make an application

While you prepare your application, you may need to speak to us about your requirements. Please get in touch to talk to us.

  1. When you are ready to make an application, you will need to fill in the following forms:
    Application for Registration (PDF 141kb)
    Application for A grade Certificate of Hygiene (PDF 140kb)
  2. Along with your application forms make sure you submit the following:
    Resource Consents you may have received as part of this application
    Code of Compliance Certificate you may have received as part of this application and
    Trade Waste Consent you may have received as part of this application
  3. Submit the appropriate fee for your application. We will advise you of the correct amount prior to applying
  4. Arrange an inspection with us

Once the application is processed, a Certificate of Hygiene will be sent to you.

Please ask us how long it is likely to take to process your application, as this can vary depending on your situation and requirements.

How much does it cost?

Costs vary between different types of registrations. Please see the fees and charges page.

We are required to levy an establishment fee for new premises, because setting up new premises may involve more inspection visits.
